Clean the Mussels
Rinse the mussels under cold running water. Scrub the shells with a brush to remove any debris or barnacles. Remove any beards (the fibrous strands) by pulling them towards the hinge of the shell.

Soak the Mussels
Place the cleaned mussels in a bowl of cold water for about 20 minutes. This allows them to expel sand and grit. After soaking, rinse them again under cold water.

Add Cooking Liquid
Pour in the dry white wine and add the black pepper. Bring the mixture to a gentle simmer.

Steam the Mussels
Add the cleaned mussels to the pot, cover it with a lid, and let them steam for about 5-7 minutes, or until the mussels have opened up. Discard any mussels that do not open.

Finish with Parsley
Remove the pot from heat, and stir in chopped fresh parsley. Taste and season with salt as needed.

Transfer the steamed mussels to a serving bowl and pour the cooking liquid over them. Serve immediately with crusty bread for dipping.
