Method

Preparing the Clams

  1. 1

    Clean the Clams

Place the clams in a bowl of cold water and let them soak for about 20 minutes to allow them to expel any sand. Rinse them under cold water and scrub the shells with a brush to remove any dirt.

  2. 2

    Steam the Clams

In a large pot, combine 2 cups of water and bring to a simmer. Add the cleaned clams to the pot, cover, and steam for about 5-7 minutes or until the clams open. Discard any clams that do not open.

Making Red Sauce

  1. 3

    Sauté Aromatics

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and 1 teaspoon of crushed red pepper flakes. Sauté for about 1-2 minutes until fragrant.

  2. 4

    Add Tomatoes

Stir in 1 can of crushed tomatoes (28 ounces) and bring to a simmer. Cook for about 10 minutes until the sauce thickens.

  3. 5

    Season the Sauce

Add 1 cup of chopped fresh basil, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir well and let it cook for an additional 2 minutes.

Making White Sauce

  1. 6

    Sauté Shallots and Garlic

In a separate skillet, melt 4 tablespoons of butter over medium heat. Add 2 finely chopped shallots and 2 minced garlic cloves. Sauté for about 3-4 minutes until soft and translucent.

  2. 7

    Add Wine and Cream

Pour in 1 cup of white wine and bring it to a boil. Reduce heat and add 1 cup of heavy cream. Stir to combine and let it simmer for about 5 minutes until slightly thickened.

  3. 8

    Finish the Sauce

Stir in 1 cup of chopped fresh parsley, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for an additional 2 minutes.

Combining Clams with Sauce

  1. 9

    Combine and Serve

Once the clams are cooked, you can either serve them with the red sauce or the white sauce. Pour the desired sauce over the clams in a serving dish and garnish with additional herbs if desired.
