Method

Fish Preparation

  1. 1

    Prepare the Fish

Rinse the scrod fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt and black pepper. Drizzle lemon juice over the fillets and let them marinate for about 15 minutes.

Breading

  1. 2

    Prepare the Breading Station

Set up a breading station by placing the flour in one shallow dish, whisking the eggs and milk together in a second shallow dish, and placing the breadcrumbs and grated Parmesan cheese in a third shallow dish. Mix the breadcrumbs and cheese together thoroughly.

  2. 3

    Bread the Fish

Dredge each marinated scrod fillet in the flour, shaking off any excess. Then dip it into the egg mixture, ensuring it is fully coated. Finally, coat the fillet in the breadcrumb and cheese mixture, pressing gently to ensure the breadcrumbs stick.

Cooking

  1. 4

    Cook the Fish

In a large skillet, heat the olive oil and butter over medium heat. Once hot, add the breaded scrod fillets to the skillet. Cook for about 3-4 minutes on each side or until the fish is golden brown and cooked through. You may need to do this in batches if your skillet is not large enough.

Garnish

  1. 5

    Garnish and Serve

Once the scrod fillets are cooked, remove them from the skillet and place them on a serving platter. Sprinkle with chopped fresh parsley and serve with lemon wedges on the side.
