Method
Pasta Preparation
- 1
Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Sauce Preparation
- 2
Roast the Garlic
In a pan, heat olive oil over medium heat. Add whole garlic cloves and sauté until golden brown and fragrant, about 5-7 minutes. Remove and set aside.
- 3
Make the Tomato Sauce
In the same pan, add the canned whole tomatoes, breaking them up with a wooden spoon. Stir in the roasted garlic, basil leaves, salt, and black pepper. Simmer for 15-20 minutes, allowing the sauce to thicken. If it becomes too thick, add reserved pasta water as needed.
Combine and Serve
- 4
Combine Pasta and Sauce
Add the drained pasta to the tomato sauce and toss well to coat the pasta evenly. If necessary, add more reserved pasta water to achieve desired consistency.
- 5
Plate the Dish
Serve the pasta in bowls, topping each with slices of fresh mozzarella and roasted red peppers. Drizzle with balsamic reduction just before serving.
