Pasta Dough Preparation

    Mix Ingredients

    In a large mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt. Make a well in the center and add 3 whole eggs and 1 tablespoon of olive oil.

    Knead Dough

    Using a fork, gradually incorporate the flour into the eggs and oil. Once combined, knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Lobster Filling Preparation

    Combine Filling Ingredients

    In a bowl, mix 1 cup of cooked lobster meat, 1 cup of ricotta cheese, 1 tablespoon of Parmesan cheese, 2 tablespoons of chopped chives (if using), and 1 teaspoon of lemon juice. Season with salt and pepper to taste.

    Cover the filling and refrigerate until ready to use.

Ravioli Assembly

    Roll Out Dough

    After the dough has rested, divide it into four pieces. Roll out each piece into a thin sheet using a pasta machine or rolling pin.
