In a large mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt. Make a well in the center and add 3 whole eggs and 1 tablespoon of olive oil.

In a bowl, mix 1 cup of cooked lobster meat, 1 cup of ricotta cheese, 1 tablespoon of Parmesan cheese, 2 tablespoons of chopped chives (if using), and 1 teaspoon of lemon juice. Season with salt and pepper to taste.

Cover the filling and refrigerate until ready to use.

Roll Out Dough
After the dough has rested, divide it into four pieces. Roll out each piece into a thin sheet using a pasta machine or rolling pin.

Place small dollops of the lobster filling (about 1 tablespoon each) on one sheet of pasta, leaving space between each. Dampen the edges with water and fold over the pasta to seal. Press firmly to remove air and cut out individual ravioli using a knife or pasta cutter.
