Steak Preparation

    Preheat your grill to high heat (about 450°F to 500°F).

    In a small bowl, mix together olive oil, salt, black pepper, and garlic powder.

    Rub the mixture all over the flat iron steak, ensuring it's evenly coated.

    Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Remove the steak from the grill and let it rest for at least 10 minutes before slicing.

Gorgonzola Aioli Preparation

    In a mixing bowl, combine mayonnaise, crumbled gorgonzola cheese, lemon juice, minced garlic clove, salt, and black pepper.

    Whisk together until smooth and creamy. Adjust seasoning to taste.
