Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 10 minutes until frothy.

    Mix Dry Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Mix well.

    Combine Wet Ingredients

    Add the activated yeast mixture and olive oil to the dry ingredients. Mix until it forms a rough dough.

    Knead the Dough

    Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Prepare Garlic Butter

    In a small saucepan, melt the unsalted butter over low heat. Add minced garlic and sauté for about 2 minutes until fragrant. Remove from heat and let it cool slightly.

    Mix Filling Ingredients

    In a bowl, combine the gorgonzola cheese, sautéed garlic butter, and chopped parsley. Mix until well incorporated.

Assembling the Bread

    Shape the Dough

    After the dough has risen, punch it down to remove excess air. Roll it out on a floured surface into a rectangle about 1/2 inch thick.

    Add Filling

    Spread the gorgonzola filling evenly over the dough, leaving a small border around the edges.

    Roll and Seal

    Starting from one side, carefully roll the dough into a log. Pinch the seams to seal and tuck the ends under.

    Place the rolled loaf seam-side down on a greased baking sheet. Cover with a cloth and let it rise for another 30 minutes.

Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare for Baking

    Brush the top of the loaf with olive oil and sprinkle the remaining gorgonzola cheese on top.

    Bake the Bread

    Bake in the preheated oven for 30-35 minutes until golden brown and sounds hollow when tapped.

    Cool and Garnish

    Remove the bread from the oven and let it cool on a wire rack for at least 10 minutes. Garnish with chopped parsley before slicing.
