    Prepare the Haddock

    Season the haddock fillets with salt and black pepper on both sides. Set aside.

    Make the Batter

    In a shallow dish, whisk together the flour, eggs, and milk until smooth. This will be your batter for the haddock.

    Batter the Haddock

    Dip each seasoned haddock fillet into the batter, ensuring it is fully coated.

    Sauté the Haddock

    In a large skillet, heat the olive oil over medium heat. Once hot, add the battered haddock fillets and sauté until golden brown, about 3-4 minutes on each side. Remove the fillets from the skillet and set aside.

Sauce Preparation

    Make the Lemon White Wine Sauce

    In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Allow it to simmer for 2-3 minutes.

    Finish the Sauce

    Add butter to the skillet and stir until melted. Finally, stir in the chopped parsley. Adjust seasoning with salt and pepper to taste.

Serving

    Plate the Dish

    Return the sautéed haddock to the skillet to coat it in the sauce, or serve the haddock on plates and drizzle the sauce over the top. Garnish with additional parsley if desired.
