Method

Preparing the Chicken

  1. 1

    Flatten Chicken

Place each chicken breast between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch.

  2. 2

    Season and Dredge Chicken

In a shallow dish, combine the flour, salt, and black pepper. Dredge each flattened chicken breast in the flour mixture until well coated, shaking off any excess flour.

Cooking the Chicken

  1. 3

    Heat Oil and Butter

In a large skillet over medium-high heat, add the olive oil and 2 tablespoons of butter. Heat until the butter is melted and bubbling.

  2. 4

    Cook Chicken

Add the chicken breasts to the skillet. Cook for about 4-5 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

Making the Sauce

  1. 5

    Sauté Mushrooms

In the same skillet, add the sliced mushrooms and sauté for about 5 minutes until they are browned and tender.

  2. 6

    Deglaze with Marsala

Pour in the Marsala wine and scrape the bottom of the skillet to deglaze it. Allow the wine to simmer for about 2-3 minutes.

  3. 7

    Add Broth

Stir in the chicken broth and bring the mixture to a gentle boil. Allow it to simmer for another 3-4 minutes to reduce slightly.

Finishing Touches

  1. 8

    Combine Chicken and Sauce

Return the chicken breasts to the skillet, cooking for an additional 2-3 minutes until they are heated through and well coated in the sauce.

  2. 9

    Garnish and Serve

Sprinkle the chopped parsley over the chicken and sauce before serving. Serve hot with your choice of sides.
