    Prepare the Chicken

    Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to about 1/2 inch thickness. Season both sides with salt and black pepper.

    In one shallow dish, place the all-purpose flour. In another shallow dish, beat the eggs. In a third dish, combine the grated Parmesan cheese with a pinch of salt and pepper.

    Dredge each chicken breast in flour, shaking off the excess. Dip into beaten eggs, allowing any excess to drip off. Finally, coat the chicken with the Parmesan cheese mixture, pressing gently to adhere.

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the breaded chicken breasts. Cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove from skillet and set aside.

    To the same skillet, add the white wine, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes. Add the chicken broth and lemon juice, and simmer for another 3-4 minutes until slightly reduced.

    Return the chicken to the skillet and cook for an additional 2 minutes, allowing the flavors to meld. Stir in the remaining 2 tablespoons of butter and fresh parsley. Taste and adjust seasoning with salt and black pepper if necessary.
