Preparation of Chicken

    Grill the Chicken

    Preheat a grill or grill pan over medium heat. Rub the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F or 75°C). Remove from heat and let rest.

Making the White Sauce

    Prepare the Sauce

    In a saucepan over medium heat, melt the butter. Once melted, stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, ensuring no lumps form. Continue stirring until the sauce thickens (about 5-7 minutes). Season with garlic powder, salt, and black pepper.

Cooking the Vegetables

    Sauté the Spinach

    In a large skillet, heat a small amount of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

    Prepare Roasted Garlic

    If not already roasted, wrap garlic cloves in foil and roast in a preheated oven at 400°F (200°C) for 20-25 minutes until soft. Squeeze out the roasted garlic from the skins and mash with a fork.

    Slice the Tomatoes

    While the garlic is roasting, slice the plum tomatoes into rounds and set aside.

Assembling the Dish

    Combine Ingredients

    Slice the grilled chicken into strips. In a baking dish, layer the sautéed spinach, followed by the sliced chicken, roasted garlic, and sliced tomatoes. Pour the white sauce evenly over the top and sprinkle with mozzarella cheese.

    Preheat the oven to 375°F (190°C). Bake the assembled dish for 20-25 minutes, or until the cheese is melted and bubbly.
