Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center, add the eggs, and gradually mix the flour into the eggs using a fork until the dough begins to come together.

    Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Filling

    In a medium bowl, mix the ricotta cheese, mozzarella cheese, parmesan cheese, fresh basil, salt, and black pepper until well combined.

Ravioli Assembly

    Roll Out the Dough

    Divide the rested dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin. Aim for about 1/16 inch thickness.

    Place small mounds (about 1 teaspoon) of the cheese filling onto one sheet of rolled-out dough, spacing them about 2 inches apart. Moisten the edges of the dough with water.
