Marinara Sauce

Preparing the Calamari

Clean the Calamari
Start by cleaning the fresh calamari. Rinse under cold water, remove the skin, and take out the innards. Cut into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and cayenne pepper. Mix well.

Prepare the Egg Mixture
In another bowl, whisk the eggs and buttermilk together until smooth.

Bread the Calamari
Dip each calamari ring first into the egg mixture, allowing excess to drip off, then coat in the flour mixture. Place them on a plate until ready to fry.
Frying the Calamari

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

Fry the Calamari
Fry the calamari rings in batches for about 2-3 minutes until they are golden brown and crispy. Do not overcrowd the pot.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve immediately with marinara sauce.

Prepare the Sauce
Add the crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well and let simmer for 15-20 minutes.

Finish the Sauce
Stir in the fresh basil just before serving. Adjust seasoning to taste.
