Preparation

Prepare the Mango Sauce
Peel and dice the ripe mango. In a blender, combine the diced mango, lime juice, honey, and a pinch of salt. Blend until smooth and set aside.

Prepare the Sweet Potatoes
Peel and cut the sweet potatoes into 1/2-inch cubes. Toss them in a bowl with cornstarch, olive oil, salt, and black pepper until evenly coated.

Cook the Sweet Potatoes
Preheat the oven to 425°F (220°C). Spread the sweet potato cubes in a single layer on a baking sheet. Bake for 25-30 minutes, stirring halfway through, until crispy and golden brown.

Blacken the Scallops
In a large skillet, heat olive oil over medium-high heat. Coat the scallops in blackening seasoning on both sides. Once the oil is hot, add the scallops to the skillet. Sear for 2-3 minutes on each side until the scallops are blackened and cooked through.
Plating

Serve
On each plate, place a bed of crispy sweet potatoes. Top with blackened scallops and drizzle the mango sauce over the scallops. Serve immediately.
