Beef Tenderloin
Mushroom Sauce
Method
Preparation of Beef
- 1
Season the Beef
Pat the beef tenderloin dry with paper towels. Season generously with salt and black pepper on all sides.
- 2
Sear the Beef
In a large skillet over medium-high heat, add olive oil. Once hot, add the seasoned beef tenderloin. Sear for about 4-5 minutes on each side, until a nice brown crust forms. Transfer to a plate and cover with foil to keep warm.
Preparation of Mushroom Sauce
- 3
- 4
Deglaze the Pan
Pour in the Marsala wine, scraping the bottom of the pan to release any browned bits. Allow to simmer for about 2-3 minutes until the wine reduces slightly.
- 5
Add Beef Broth
Add the beef broth to the skillet and bring to a gentle simmer. Let it cook for another 5 minutes until the sauce thickens slightly.
- 6
Combine with Beef
Return the seared beef tenderloin to the skillet, spooning some of the sauce over it. Cook for an additional 2-3 minutes until the beef is heated through.
Serving
- 7
Plate the Dish
Slice the beef tenderloin into medallions and arrange them on a serving platter. Pour the mushroom sauce over the beef.
- 8
Garnish
Sprinkle chopped parsley over the top for garnish.
