    Prepare the Ingredients

    Start by washing, peeling, and dicing the potatoes. Slice the onion and set aside the mixed seafood.

    Cook the Potatoes

    In a large frying pan or wok, heat 1 tablespoon of oil over medium heat. Add the diced potatoes and sauté until they are golden and tender, about 10-12 minutes. Remove from the pan and set aside.

    Sauté the Onions

    In the same pan, add the remaining tablespoon of oil. Sauté the sliced onions until they become translucent, about 5 minutes.

    Add Seafood and Curry Powder

    Add the mixed seafood into the pan with the onions. Sprinkle the dry yellow curry powder over the seafood and stir well to coat. Cook for about 3-4 minutes until the seafood is cooked through.

    Combine and Simmer

    Return the cooked potatoes to the pan. Pour in the coconut milk and stir gently to combine. Season with salt and pepper. Allow to simmer for another 5 minutes.

    Incorporate the Eggs

    Make a well in the center of the curry mixture and pour in the beaten eggs. Stir gently until the eggs are cooked and incorporated into the dish.
