Prepare the Halibut
Season the Alaskan Halibut fillets with salt and black pepper on both sides.
Sear the Halibut
In a large skillet, heat olive oil over medium-high heat. Add the seasoned Halibut fillets and sear for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
Make the Saffron Lemongrass Sauce
In the same skillet, add the minced garlic and sliced lemongrass. Sauté for 2-3 minutes until fragrant. Add the saffron threads and coconut milk, stirring to combine. Bring the mixture to a simmer and reduce heat, allowing it to thicken slightly, about 5-7 minutes.
Finish the Sauce
Stir in lime juice and chopped cilantro. Adjust seasoning with salt and pepper to taste.
Serve
Place the seared Halibut on plates and spoon the saffron lemongrass sauce over the top. Garnish with additional cilantro if desired.
