Preparation and Cooking
Prepare the Batter
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, and cold water to create a smooth batter.
Prepare the Halibut
Pat the Alaskan halibut fillets dry with paper towels. Dip each fillet into the batter until fully coated.
Heat the Oil
In a large pan or deep fryer, heat the vegetable oil over medium-high heat until hot.
Fry the Halibut
Carefully add the battered halibut to the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Make the Red Curry Sauce
In a saucepan over medium heat, combine the red curry paste and coconut milk. Stir well and bring to a simmer. Cook for about 5 minutes until the sauce thickens.
Garnish and Serve
Slice the red bell pepper thinly. Serve the fried halibut topped with the red curry sauce, garnished with Thai basil leaves, kaffir lime leaves, and sliced red bell pepper.
