Prepare the Rice Noodles
Soak the rice noodles in hot water for about 20-30 minutes until they are soft. Drain and set aside.

Cook the Tofu
Cut the tofu into small cubes. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the tofu and cook until golden brown on all sides. Remove tofu from the pan and set aside.

Scramble the Eggs
In the same pan, add another tablespoon of oil. Crack the eggs into the pan and scramble until fully cooked. Remove from the pan and set aside with the tofu.

Sauté the Vegetables
Add the remaining tablespoon of oil to the pan. Add the bean sprouts and chopped green onions, and sauté for 2-3 minutes until tender.

Combine Ingredients
Add the soaked rice noodles, tofu, scrambled eggs, soy sauce, and chili powder to the pan. Stir well and cook for another 3-5 minutes until everything is heated through.

Serve
Serve the Pad Thai hot, garnished with ground peanuts and lime wedges on the side.
