Prepare the Noodles
Soak the wide rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

Cook the Vegetables
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add minced garlic and stir-fry for about 30 seconds until fragrant. Then add sliced carrots and broccoli florets, cooking for 3-4 minutes until just tender.

Scramble the Eggs
Push the vegetables to one side of the skillet. Add the remaining tablespoon of oil to the empty side. Crack the eggs into the skillet and scramble them, mixing with the vegetables once cooked through.

Combine and Season
Add the drained noodles to the skillet. Pour in the sweet soy sauce, and sprinkle with white pepper and salt. Toss everything together gently, ensuring the noodles are coated well with the sauce. Stir-fry for an additional 2-3 minutes until heated through.

Remove from heat and serve hot, garnished with extra vegetables or herbs if desired.
