Slice the fresh ginger, trim and cut the green beans, and tear the lime leaves.

Sauté the Aromatics

In a large skillet, heat the vegetable oil over medium heat. Add the sliced ginger and sauté for about 1-2 minutes until fragrant.

Add the Green Beans

Add the green beans to the skillet and stir-fry for another 3-4 minutes until they begin to soften.

Incorporate the Curry Paste

Stir in the red curry paste and lime leaves, mixing well to coat the ingredients in the paste.

Add Coconut Milk and Soy Sauce

Pour in the coconut milk and soy sauce, stirring to combine. Allow the mixture to simmer for about 5-7 minutes, until the green beans are tender and the sauce has thickened slightly.

Remove from heat, garnish with fresh basil leaves, and serve hot with rice or noodles.
