    Prepare Ingredients

    Start by roasting the cashew nuts in a dry skillet over medium heat until golden brown. Remove and set aside. Soak the dried red chilies in hot water for about 10 minutes, then drain and chop them. Slice the onion and mince the garlic.

    Stir-fry

    In a large frying pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sliced onion, and stir-fry for 2-3 minutes until fragrant and the onion is translucent.

    Add Cashews and Chilies

    Add the roasted cashew nuts and chopped chilies to the pan. Stir well to combine with the onion and garlic mixture.

    Season

    Pour in the soy sauce and oyster sauce, and sprinkle the sugar. Stir-fry for another 2-3 minutes. Adjust seasoning with salt and black pepper to taste.

    Serve

    Once everything is well combined and heated through, remove from heat and serve hot. Enjoy as a snack or side dish!
