Cook the Pork
In a skillet over medium heat, add the minced pork. Cook until browned and fully cooked, breaking it apart with a spatula.

Add the Curry Paste
Stir in the red curry paste and cook for another 2-3 minutes until fragrant.

Incorporate Tomatoes
Add the diced tomatoes and cook down for about 5 minutes until they soften.

Mix in Coconut Milk
Pour in the coconut milk, fish sauce, and sugar. Stir to combine and let simmer on low heat for 10 minutes.

Finish with Lime Juice
Remove from heat and stir in the lime juice. Adjust seasoning if necessary.

Serve warm with steamed assorted vegetables and pork rinds on the side for dipping.
