Marinade and Sauce

Method

Preparation and Cooking

  1. 1

    Marinate the Pork

In a large bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, white pepper, cilantro, lime juice, chili flakes, and water. Mix well. Add the pork loin slices and coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

Prepare the Sweet & Sour Sauce

In a small saucepan, combine sugar, vinegar, ketchup, and chili sauce. Stir over medium heat until the sugar dissolves and the sauce thickens slightly. Remove from heat and set aside.

  3. 3

    Grill the Pork

Preheat the grill to medium-high heat. Remove the pork from the marinade and discard the marinade. Grill the pork slices for about 5-7 minutes on each side or until fully cooked and nicely charred.

  4. 4

    Serve

Slice the grilled pork and serve with the sweet & sour sauce on the side.
