Soak the wide rice noodles in hot water for about 20 minutes or until soft. Drain and set aside.

In a large pot, bring the chicken broth to a gentle boil. Stir in the soy sauce, fish sauce, and sugar. Let it simmer for about 10 minutes.

Combine Ingredients
In serving bowls, place a portion of the soaked rice noodles. Ladle the hot broth over the noodles.

Top the soup with bean sprouts, chopped onions, fresh cilantro, fried garlic, and shallots.
