Marinate the Lamb Chops
In a large bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, lemongrass, lime juice, and chili paste. Add the lamb chops and ensure they are well coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Grill
Preheat your grill to medium-high heat. If using charcoal, allow the coals to ash over before grilling.

Grill the Lamb Chops
Remove the lamb chops from the marinade and discard the marinade. Grill the chops for about 4-5 minutes on each side or until they reach your desired level of doneness.

Prepare the Serving
While the lamb chops are grilling, arrange the mixed greens on a serving platter. Once the lamb chops are done, place them on top of the greens.

Serve
Drizzle the sweet & sour sauce over the lamb chops and serve with a side of Jao sauce.
