Prepare the Ingredients
Rinse the scallops under cold water and pat dry. Trim the green beans and slice the red bell pepper into thin strips.

Sauté the Vegetables
In a large skillet, heat the vegetable oil over medium heat. Add the red curry paste and sauté for about 1-2 minutes until fragrant.

Add Coconut Milk and Scallops
Pour in the coconut milk and stir well to combine with the curry paste. Add the scallops, green beans, red bell pepper, and kaffir lime leaves. Season with salt.

Cook the Scallops
Cook for about 5-7 minutes, stirring gently until the scallops are opaque and cooked through, and the vegetables are tender.

Garnish and Serve
Remove from heat, discard the kaffir lime leaves, and serve the dish garnished with fresh cilantro.
