Prepare Gelatin
In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let it sit for about 5 minutes to bloom.

Heat Cream
In a saucepan, combine the heavy cream and sugar. Heat over medium heat until the sugar is dissolved and the mixture is hot but not boiling.

Combine Mixtures
Remove the saucepan from heat. Stir in the bloomed gelatin until completely dissolved. Then add the mascarpone cheese, vanilla extract, and coffee. Whisk until smooth and well combined.

Chill
Pour the mixture into individual serving cups or glasses. Refrigerate for at least 4 hours, or until set.

Prepare Garnish
Before serving, crumble lady fingers and sprinkle over the top of the set panna cotta. Dust with cocoa powder for garnish.
