Chimichurri Sauce

Preparation

Marinate the Lamb Chops

1. Prepare the Marinade

In a mixing bowl, combine minced garlic, fresh rosemary, thyme, olive oil, salt, and freshly ground black pepper. Mix well to form a fragrant marinade.

2. Marinate the Chops

Place the lamb chops in a large zip-top bag or shallow dish. Pour the marinade over the chops, making sure each chop is well-coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight to enhance flavor.

Make the Chimichurri Sauce

3. Blend the Chimichurri

In a food processor or blender, combine chopped fresh parsley, fresh oregano, garlic, red chili flakes, red wine vinegar, and olive oil. Blend until a coarse but uniform mixture forms. Season with salt and pepper to taste. Transfer to a bowl, cover, and let sit at room temperature for at least 30 minutes.

Grill the Lamb Chops

4. Preheat the Grill

Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

5. Grill to Perfection

Remove the lamb chops from the marinade and let any excess drip off. Grill the chops for 2–3 minutes per side for medium-rare, or longer depending on desired doneness. Use a meat thermometer to ensure internal temperature reaches 135°F (57°C) for medium-rare.

6. Rest the Chops

Transfer the grilled lamb chops to a plate and allow them to rest for 5 minutes before serving. This helps retain their juices.

Serve

7. Plate and Garnish

Serve the grilled lamb chops hot, drizzled with chimichurri sauce or with the sauce on the side for dipping. Optionally garnish with additional fresh herbs for presentation.
