Blister the Cherry Tomatoes
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the cherry tomatoes and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes are blistered and slightly softened. Remove from the skillet and set aside.
Prepare the Creamed Corn
In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant. Add the fresh corn kernels and continue to cook for another 3 minutes.
Create the Cream Sauce
Reduce the heat to medium-low and pour in the heavy cream. Stir well and let it simmer for about 5 minutes until slightly thickened. Season with salt and black pepper to taste.
Combine and Serve
Add the blistered cherry tomatoes back into the skillet with the creamed corn. Gently stir to combine. Tear the fresh basil leaves and sprinkle them over the top before serving.
