Prepare Corn Husks
Soak the corn husks in warm water for at least 30 minutes to soften them.

Make the Dough
In a large mixing bowl, combine corn masa, baking powder, and salt. Gradually add vegetable oil or lard and chicken or pork broth until a smooth dough forms. The dough should be fluffy and spreadable.

Prepare Filling
In another bowl, mix the shredded chicken or pork with red chili sauce (if using) to add flavor.

Assemble Tamales
Take a soaked corn husk, spread about 1/4 cup of the masa dough in the center, leaving some space at the edges. Place 2 tablespoons of the meat filling on top of the dough. Fold the sides of the husk over the filling and then fold up the bottom to secure the tamale.

Steam Tamales
Place the tamales upright in a steamer pot. Cover with additional corn husks or a cloth and steam for about 1 to 1.5 hours, or until the masa easily separates from the husk.

Serve
Let tamales cool slightly before serving. Serve with additional chili sauce, if desired.
