Prepare the Pork
Season the pork belly with salt, black pepper, cumin, minced garlic, and the juice of half a lime. Let it marinate for at least 1 hour.

Fry the Pork
Heat the oil in a deep frying pan over medium heat. Once hot, add the marinated pork belly and fry until golden brown and crispy. This should take about 15-20 minutes. Remove and drain on paper towels.

Fry the Sweet Potatoes
Peel and cut the sweet potatoes into thin slices. In the same oil used for the pork, fry the sweet potato slices until they are crispy and golden brown. Drain on paper towels.

Assemble the Sandwich
Slice the bread rolls in half. Layer the fried pork belly, pickled onions, and fried sweet potato slices inside the rolls. Squeeze some lime juice on top before closing the sandwich.

Serve the sandwiches warm with additional lime wedges on the side.
