Prepare the Onions
Slice the red onions thinly and soak them in vinegar for at least 30 minutes to pickle slightly.
Cook the Pork
In a large skillet, heat vegetable oil over medium heat. Cut the pork shoulder into chunks, season with salt and black pepper, and fry until golden brown and cooked through, about 20-25 minutes.
Fry the Black Sausage
In the same skillet, add the black sausage and cook until crispy on the outside, about 5-7 minutes. Remove and set aside.
Prepare the Sweet Potatoes
Peel and cut the sweet potatoes into thick slices. In a separate pot, boil them in salted water until tender, about 15-20 minutes. Drain and set aside.
Heat the Tamales
Steam or microwave the tamales until heated through, about 10 minutes.
Cook the Mote
If using dried mote, soak overnight, then boil until tender (about 1-2 hours). If using canned mote, simply rinse and heat in a pot.
Serve
On a large platter, arrange the fried pork, black sausage, sweet potatoes, tamales, and mote. Top with pickled onions and sprinkle with chopped cilantro.
