Tart Crust

Prepare the Crust

In a bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, mixing until the dough holds together. Form into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

Bake the Crust

Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork and bake for 20 minutes or until golden. Let cool.

White Chocolate Filling

Melt the Chocolate

In a saucepan over low heat, combine the heavy cream and white chocolate, stirring until melted and smooth. Remove from heat.

Combine Ingredients

In a bowl, whisk together the egg yolks, sugar, orange zest, and orange juice. Gradually add the melted chocolate mixture, whisking continuously.

Bake the Filling

Pour the filling into the cooled tart shell and bake at 325°F (160°C) for 25-30 minutes, or until just set. Let cool completely.

Blueberry Coulis

Prepare the Coulis

In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens, about 10-15 minutes. Strain if desired for a smoother texture.
