1. Prepare the Sweet Potatoes
Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes until tender.
2. Prepare the Filling
Once the sweet potatoes are cool enough to handle, cut them in half lengthwise and scoop out the flesh into a mixing bowl, leaving some flesh around the edges.
3. Mix the Ingredients
Add cashew queso, ground cumin, chopped green onions, chopped cilantro, lime zest, salt, and pepper to the sweet potato flesh. Mix until well combined.
4. Stuff the Sweet Potatoes
Spoon the filling back into the sweet potato skins, mounding it slightly.
5. Bake Again
Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes until heated through and slightly golden on top.
6. Garnish and Serve
Remove from the oven and garnish with additional chopped green onions and cilantro if desired. Serve warm.
