Roast Pork Preparation

    Prepare the Pork

    Preheat the oven to 300°F (150°C). In a bowl, mix the moruno spice, olive oil, minced garlic, salt, and black pepper to create a marinade. Rub the marinade all over the pork shoulder.

    Roast the Pork

    Place the marinated pork shoulder in a roasting pan and cover it with foil. Roast in the preheated oven for about 4-5 hours until the meat is tender and easily pulled apart. Remove the foil for the last 30 minutes to allow the top to caramelize.

Fried Onions Preparation

    Fry the Onions

    In a mixing bowl, combine the flour, cornstarch, and salt. Dredge the thinly sliced onions in the mixture. Heat vegetable oil in a frying pan over medium heat, and fry the onions until golden and crispy. Drain on paper towels.

Sandwich Assembly

    Assemble the Sandwich

    Slice the papo seco buns in half. Layer shredded roast pork on the bottom half, followed by a generous portion of fried onions. Top with the other half of the bun. Serve with fries on the side.
