Mussels and Broth
Grilled Bread
Method
Cooking the Mussels
- 1
Prepare the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.
- 2
Make the Broth
In a large pot, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Pour in the white wine and fumé, bring to a simmer.
- 3
Add Tomato Sauce and Seasonings
Stir in the tomato sauce, black olives, red pepper flakes, salt, and pepper. Let the mixture simmer for about 5 minutes.
- 4
Cook the Mussels
Add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.
- 5
Finish with Fresh Herbs
Stir in the chopped parsley and remove from heat.
