Prepare the Potatoes
Peel and chop the potatoes into small cubes. In a pot, add the potatoes and cover with vegetable broth. Bring to a boil and cook until tender, about 15 minutes.

Cook the Spinach
Add the fresh spinach to the pot with the cooked potatoes and broth. Cook for an additional 5 minutes until the spinach is wilted.

Blend the Soup
Remove the pot from heat and allow to cool slightly. Use an immersion blender to puree the mixture until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

Season the Soup
Stir in the olive oil, nutmeg, salt, and black pepper to taste. Adjust seasoning as needed.

Chill the Soup
Transfer the soup to a container and refrigerate for at least 2 hours or until completely chilled.

Thinly slice the radishes and chop the chives for garnish.
