    Prepare the Apples

    Wash and core the bittersweet and dessert apples. Cut them into small pieces and place them into a large fermentation vessel.

    Extract Juice

    Use a cider press or juicer to extract the juice from the apple pieces. Collect the juice in a clean container.

    Mix Ingredients

    In a separate container, mix the extracted apple juice with water and beet sugar until the sugar is dissolved. If using, crush the Campden tablets and add them to the mixture for sanitation.

    Add Yeast

    Once the juice mixture has cooled to room temperature, sprinkle the yeast over the surface and gently stir to incorporate.

    Fermentation

    Cover the fermentation vessel with an airlock and let it sit in a cool, dark place for 1-2 weeks, allowing fermentation to occur. Check for bubbles in the airlock to confirm fermentation.

    Bottling

    After fermentation has slowed, siphon the cider into clean bottles, leaving some space at the top. Seal the bottles with caps or corks.

    Aging

    Store the bottles upright in a cool, dark area for an additional 2-4 weeks to carbonate and age the cider.

    Once aged, chill the cider in the refrigerator and serve it cold. Enjoy your homemade pub cider!
