Prepare the Cider Base
In a clean fermentation vessel, pour the fresh-pressed cider. If you're using Campden tablets, crush and dissolve it in a small amount of warm water, then add it to the cider to prevent unwanted bacteria.

Add Honey
Stir in the local honey until fully dissolved. If the mixture is too thick, you can add water to achieve a desired consistency.

Add Yeast
Sprinkle the yeast over the top of the cider mixture. Allow it to sit for 10-15 minutes before gently stirring to combine.

Fermentation
Cover the fermentation vessel with a clean cloth or airlock and place it in a cool, dark area. Allow the cyser to ferment for about 2-4 weeks, checking regularly for bubbling.

Aging
Let the cyser age for at least 1-3 months for best flavor. You can taste periodically to find your preferred flavor profile.

Serve chilled in a 5oz glass, or warm it gently for a cozy drink. Enjoy!
