Directions for Making Full Montana Cider

    Prepare the Apples

    Wash and core the Montana apples. Cut them into quarters and place them in a large fermentation vessel.

    Extract the Juice

    Using a cider press or juicer, extract the juice from the apple quarters. Collect the juice in a sanitized container.

    Add Sugar and Water

    In a separate bowl, mix the apple juice with the beet sugar and water until the sugar is completely dissolved.

    Prepare for Fermentation

    If using, crush the Campden tablets and add them to the mixture to sterilize. Let it sit for 24 hours.

    Add Yeast

    After 24 hours, sprinkle the cider yeast over the surface of the mixture. Stir gently to combine.

    Fermentation Process

    Cover the fermentation vessel with a fermentation lock and place it in a cool, dark place. Allow it to ferment for about 2-4 weeks, or until bubbling ceases.

    Bottling

    Once fermentation has completed, siphon the cider into sanitized bottles, leaving about an inch of headspace. Cap the bottles.

    Aging

    Store the bottles in a cool, dark place for at least 1-2 months to mature and carbonate before consuming.
