Fermentation Process

    Prepare the Cider

    Wash the cider apples thoroughly. Cut them into quarters and remove any stems and leaves.

    Extract Juice

    Using a cider press or juicer, extract the juice from the prepared apples. Collect the juice in a sanitized container.

    Mix Ingredients

    In a fermentation vessel, combine the apple juice, pear juice, sugar, water, acid blend, and crushed Campden tablets. Stir well to dissolve the sugar.

    Add Yeast

    Once the mixture is at room temperature, sprinkle the yeast on top and gently stir it in.

    Fermentation

    Cover the fermentation vessel with an airlock and place it in a dark, cool area. Allow it to ferment for about 2 to 3 weeks or until fermentation activity has slowed down.

    Bottling

    After fermentation, siphon the cider into sanitized bottles, leaving some space at the top. Seal the bottles with caps or corks.

    Aging

    Store the bottles in a cool, dark place for at least 1 month to allow flavors to develop. It can be consumed after this period but will improve with age.
