Cider Brewing Process

Prepare the Apple Mixture
Wash and chop the bittersweet cider apples and heirloom desert apples. Combine them in a large fermentation vessel.

Pitch the Yeast
Sprinkle the cider yeast over the apple mixture. Allow it to sit for about 10 minutes before stirring gently to incorporate.

Fermentation
Cover the fermentation vessel with a clean cloth and let it sit in a cool, dark place for 1-2 weeks, stirring daily. Monitor the fermentation process until bubbling slows down.

Barrel Aging
Once fermentation is complete, transfer the cider into the Chardonnay barrels. Seal and let age for at least 2-3 months to develop flavors.

Bottling
After aging, siphon the cider into clean bottles, leaving some headspace at the top. Seal with caps and refrigerate.

Serve chilled and enjoy the unique flavors of the Chardonnay barrel-aged cider, best enjoyed within a year.
