Prepare the Apples
Wash and core the Newtown Pippin apples, then chop them into small pieces.

Juicing
Using a cider press or juicer, extract the juice from the chopped apples. Collect the juice in a sanitized fermentation vessel.

Sanitizing
Crush the Campden tablets and dissolve them in a small amount of water. Add this mixture to the apple juice to kill any wild yeast and bacteria. Let it sit for 24 hours.

Adding Yeast
After 24 hours, sprinkle the yeast over the apple juice mixture. Do not stir. Cover the fermentation vessel with an airlock.

Fermentation
Allow the mixture to ferment in a cool, dark place for 4-6 weeks. Check periodically for bubbling, which indicates fermentation is happening.

Bottling
Once fermentation has stopped, siphon the cider into sanitized bottles, leaving some space at the top. Seal with caps or corks.

Aging
Store the bottles in a cool, dark place for at least another 2-3 months to allow the flavors to develop.
