Prepare the Apples
Wash, core, and chop the fresh apples, then place them in a large pot.

Cook the Apples
Add water to the pot and heat over medium heat until the apples soften, about 20 minutes.

Extract Juice
Once the apples are soft, mash them and strain the mixture through a cheesecloth or fine strainer to extract the juice.

Fermentation
Transfer the mixture to a fermentation vessel, add cinnamon sticks, and cover. Let it ferment in a cool, dark place for 1-2 weeks.

Add Oak Chips
After fermentation, add oak chips to the cider for barrel-aged flavor and let it sit for an additional 2-4 weeks.

Bottling
Once aged, strain the cider again and bottle it. Let it carbonate for another week before serving.
