Cider Preparation

Prepare the Apples
Wash and core the Jonathan apples. Cut them into quarters.

Juicing
Using a cider press or juicer, extract the juice from the apple quarters into a large fermentation vessel.

Add Yeast
Sprinkle the yeast over the surface of the juice mixture. Allow it to sit for about 10 minutes to hydrate.

Fermentation
Cover the fermentation vessel with a cloth or airlock and let it ferment in a cool, dark place for about 2-4 weeks, or until fermentation has slowed significantly.

Let the bottled cider age for at least another 2-4 weeks for better flavor development before consuming.
