Cider Making Instructions

    Prepare the Ingredients

    In a large sanitized fermentation vessel, combine the fresh apple juice and Flathead cherry juice. Stir well to mix.

    Add Sugar and Yeast

    Dissolve the granulated sugar in 1 cup of warm water and add it to the juice mixture. Then, sprinkle the Champagne yeast over the top and stir gently.

    Add Other Additives

    Add the acid blend, pectic enzyme, and potassium metabisulfite to the mixture. Stir until fully dissolved.

    Fermentation

    Cover the fermentation vessel with an airlock and let it ferment in a cool, dark place for about 2-4 weeks or until fermentation has stopped (when bubbles cease).

    Bottling

    Once fermentation is complete, siphon the cider into sanitized bottles, leaving some headspace. Seal the bottles with caps or corks.

    Aging

    Store the bottles in a dark, cool place for at least 1-2 months to allow the flavors to mature before serving.
