For the Torta Ahogada

Method

Preparation

  1. 1

    Prepare the Salsa

In a pot, boil the tomatoes and dried guajillo chiles in water for about 10 minutes until softened. Drain and blend together with garlic, cumin, and salt, adding a little water if necessary to achieve a smooth consistency.

  2. 2

    Prepare the Torta

Slice the bolillo rolls in half and lightly toast them. Spread a layer of refried black beans on the bottom half of each roll. Add a generous amount of carnitas on top and cover with the top half of the roll.

  3. 3

    Assemble the Torta Ahogada

Place the assembled tortas in a serving dish and generously pour the prepared salsa over the top to 'drown' them. Let them soak for a few minutes.

  4. 4

    Garnish

Slice the onion and avocado. Top the tortas with sliced onion and avocado. Serve with lime wedges on the side.
