Make the Dough

In a large bowl, combine flour, baking powder, and salt. Mix well. Add vegetable oil and water, and knead until a smooth dough forms. Cover and let it rest for 30 minutes.

Roll Out the Dough

After resting, roll the dough out on a floured surface to about 1/4 inch thickness. Cut into squares or triangles.

Heat the Oil

In a deep skillet or fryer, heat oil to 375°F (190°C).

Fry the Sopapillas

Carefully add the dough pieces to the hot oil. Fry until they puff up and turn golden brown, about 1-2 minutes on each side.

Drain and Sugar

Remove the sopapillas from the oil and drain on paper towels. In a small bowl, mix together sugar and cinnamon. Sprinkle over the warm sopapillas.

Serve with Ice Cream

Serve the warm sopapillas drizzled with honey and topped with scoops of vanilla ice cream.
