    Prepare the Rice

    Rinse the rice under cold water until the water runs clear. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and water is absorbed. Set aside.

    Sauté the Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion, bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender. Season with salt and black pepper. Remove from heat and set aside.

    Grill the Tilapia

    In another skillet or grill pan, heat the remaining 2 tablespoons of olive oil over medium-high heat. Season the tilapia fillets with salt and black pepper. Grill the fillets for about 3-4 minutes on each side or until the fish is cooked through and flakes easily with a fork.

    Serve

    On a plate, place a portion of rice, top with the grilled tilapia, and spoon the sautéed vegetables over the fish. Drizzle with a la diabla salsa. Serve with steamed vegetables on the side.
